Desktop Computing, Ubuntu, and general technological frustration
After much frustration and effort, I finally got my computer "rebuilt."
@reflectivedragon insisted that I encrypt my hard drives. I decided to buy a couple new 1TB SSDs, reinstall the operating system on one, and use the other to store data like Music and Videos and Documents and what not.

Not gonna lie, I'm honestly glad that this is all done now. It's always refreshing to compute with a freshly installed operating system. Everything is nice and snappy.
The key frustration was mostly me trying to use Ubuntu 20.04, which uses much newer linux kernels that - apparently - take a huge shit whenever you've got multiple graphics cards. XD
